Dredge the jackfruit in the flour and let set for five minutes. Dip in the eggs and then dredge in the flour a final time.
Heat the 2 cups oil in a pan on medium high heat. Add the jackfruit and fry for 4 minutes. Lower the heat and flip the jackfruit, frying on the other side for about 5 minutes until the crust is golden and cooked through.

In a food processor, add the 1 canned chipotle chile, 2 tbsp mayonnaise, 1 clove garlic, and the juiced ½ lime and blend until smooth.
