Chile Lime Jackfruit "Chicken" Fingers

Ingredients
  

For the fingers:

  • 20 pieces marinated jackfruit like Upton's Naturals
  • 2 eggs or a vegan egg substitute beaten
  • ½ cup all purpose flour
  • 2 tsp paprika
  • 1 tsp chili powder
  • 1 tsp cayenne pepper
  • 2 tsp lime zest
  • 2 tsp salt
  • 2 cups oil

For the sauce:

  • 1 canned chipotle chile
  • 1 clove garlic
  • 2 tbsp mayonnaise
  • ½ lime juiced

Instructions
 

  • Pat the 20 pieces marinated jackfruit dry with paper towels.

  • Place the beaten 2 eggs or a vegan egg substitute in a shallow dish. In a similarly shallow dish, whisk together the ½ cup all purpose flour, 1 tsp chili powder, 2 tsp paprika, 1 tsp cayenne pepper, 2 tsp salt, and 2 tsp lime zest.

  • Dredge the jackfruit in the flour and let set for five minutes. Dip in the eggs and then dredge in the flour a final time.
  • Heat the 2 cups oil in a pan on medium high heat. Add the jackfruit and fry for 4 minutes. Lower the heat and flip the jackfruit, frying on the other side for about 5 minutes until the crust is golden and cooked through.

  • Transfer the fried jackfruit to a paper towel-lined plate and sprinkle with salt.
  • In a food processor, add the 1 canned chipotle chile, 2 tbsp mayonnaise, 1 clove garlic, and the juiced ½ lime and blend until smooth.

  • Serve the fried jackfruit with the sauce.
