  • 20 pieces marinated jackfruit like Upton's Naturals
  • 2 eggs or a vegan egg substitute beaten
  • ½ cup all purpose flour
  • 2 tsp paprika
  • 1 tsp chili powder
  • 1 tsp cayenne pepper
  • 2 tsp lime zest
  • 2 tsp salt
  • 2 cups oil

For the sauce:

  • 1 canned chipotle chile
  • 1 clove garlic
  • 2 tbsp mayonnaise
  • ½ lime juiced

Instructions
 

  • Pat the 20 pieces marinated jackfruit dry with paper towels.

  • Place the beaten 2 eggs or a vegan egg substitute in a shallow dish. In a similarly shallow dish, whisk together the ½ cup all purpose flour, 1 tsp chili powder, 2 tsp paprika, 1 tsp cayenne pepper, 2 tsp salt, and 2 tsp lime zest.
