Preheat the oven to 325 degrees.
In a bowl, whisk together the 1 ½ cups all purpose flour, 1 cup cake flour, 2 tsp baking powder, 3 tsp ground cinnamon, ½ tsp nutmeg, ¼ tsp allspice, and 1 tsp salt.

In the bowl of an electric mixture, cream together the 1 ½ cup salted butter, 1 ¼ cup brown sugar, and 1 cup granulated sugar on medium speed for about two minutes.

Add the 3 eggs one at a time, fully incorporating at low speed between each addition. Add the 2 tsp vanilla extract and incorporate on low speed.

Add the flour to the butter mixture and beat on low speed until incorporated. Pour in the ¼ cup buttermilk and ½ cup apple cider and beat on low speed for about 1 minute until a smooth and incorporated batter forms.

Grease a donut pan and fill each with batter.
Bake for 25 minutes. Let the donuts cool for 15 minutes in the pan before removing.
In a bowl, whisk together the ½ cup granulated sugar, ¼ tsp nutmeg, and 1 tbsp ground cinnamon.

Dip each donut into the sugar mixture to fully coat.
