Ingredients
  

  • 1 1/2 cups flour
  • 2 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp salt
  • 1 cup unsalted butter softened
  • 1 cup brown sugar
  • 1/2 cup maple syrup
  • 2 eggs
  • 1 tsp vanilla extract
  • 3 cups oats
  • 6 pieces bacon cooked and chopped

  • Preheat the oven to 350 degrees.
  • In a bowl, whisk together the 1 1/2 cups flour, 2 tsp cinnamon, 1/2 tsp baking soda, 1/2 tsp baking powder, and 1 tsp salt.

  • In the bowl of a stand mixer, add the 1 cup unsalted butter, 1 cup brown sugar, and 1/2 cup maple syrup. On medium speed, cream together the ingredients until combined, about 2 minutes.

  • Add the 2 eggs and 1 tsp vanilla extract and beat in until combined.

  • Mix in the flour mixture on medium speed, adding ¼ cup each time and fully combining after each addition.
  • With a spatula, fold in the 3 cups oats and the chopped 6 pieces bacon until evenly distributed throughout the dough.

  • Line two cookie sheets with parchment paper. Scoop 2 tbsp sized balls of dough at least two inches apart onto the sheets.
  • Bake for 20 minutes. Cool on a cooling rack for 10 minutes before serving.
