Ingredients
  

  • ¼ lb ground beef
  • ¼ lb italian sausage meat
  • 1 medium yellow onion chopped
  • 3 garlic cloves minced
  • 1 14.5 oz can diced tomatoes
  • 1 8 oz can tomato sauce
  • 2 tbsp tomato paste
  • 4 cups beef broth
  • 2 sprigs thyme minced
  • 1 sprig rosemary minced
  • ½ cup heavy cream
  • 6 uncooked lasagna noodles
  • Salt and pepper
  • Ricotta optional for topping
  • Basil optional for topping

Instructions
 

  • In a large pot over medium heat, brown the ¼ lb ground beef and ¼ lb italian sausage meat until fully cooked, breaking it into small pieces with a spoon as it cooks.

  • Add the chopped 1 medium yellow onion to the pot and sauté until it becomes translucent.

  • Stir in the minced 3 garlic cloves and sauté for an additional 1-2 minutes until fragrant.

  • Pour in the 1 14.5 oz can diced tomatoes, 1 8 oz can tomato sauce, and 2 tbsp tomato paste. Stir to combine.

  • Pour in the 4 cups beef broth and add the minced 2 sprigs thyme and 1 sprig rosemary to the pot.

  • Bring the mixture to a simmer and let it cook for about 15 minutes.
  • Stir in the ½ cup heavy cream, allowing it to blend into the soup. Simmer for an additional 5 minutes.

  • Break the 6 uncooked lasagna noodles into smaller pieces and add them to the pot. Cook until the noodles are tender, following the package instructions.

  • Season the soup with Salt and pepper to taste. Adjust the consistency with additional broth if needed.
