Irish Soda Bread

Quick bread native to Ireland made with buttermilk and studded with raisins.

Ingredients
  

  • 3 ½ cups all purpose flour
  • 2 tbsp granulated sugar
  • 2 tsp salt
  • 1 egg
  • 1 ½ cups buttermilk
  • 1 tsp baking powder
  • 4 tbsp cold butter; cubed
  • ¾ cup raisins
  • ¼ cup heavy cream

Instructions
 

  • Preheat your oven to 450°F and line a baking sheet with parchment paper.
  • In a large bowl, whisk together the 3 ½ cups all purpose flour, 1 tsp baking powder, 2 tbsp granulated sugar, and 2 tsp saltuntil well combined.

  • Add the cold cubes of butter and work it into the flour using your fingers until they become pea sized.

  • in a separate bowl, whisk together the 1 ½ cups buttermilk and egg.

  • Make a well in the center of the flour mixture and pour in the buttermilk mixture.
  • Using a wooden spoon to stir the mixture until it comes together into a flaky dough.
  • Add the ¾ cup raisins and work into the dough.

  • Turn the dough out onto a lightly floured surface and press it together into a round loaf.
  • Place the loaf onto the prepared baking sheet and use a sharp knife to cut a cross into the top of the dough.
  • Brush the loaf with heavy cream to help achieve a golden brown finish.

  • Bake for 50 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.
  • Transfer the bread to a wire rack to cool completely before slicing and serving slathered in butter.
