Barbacoa Tacos with Pickled Jalapeño Crema

These Barbacoa Tacos are everything I want in a taco night: tender, slow-braised beef, warm tortillas, a cool and creamy jalapeño crema, and plenty of tangy pickled onions piled on top.

Ingredients
  

For the Barbacoa:

  • 3 lbs beef chuck roast cut into large chunks
  • 2 tbsp olive oil
  • 1 yellow onion roughly chopped
  • 5 garlic cloves smashed
  • 1 can chipotle peppers in adobo and sauce chopped
  • 1 cup beef broth
  • 1/4 cup orange juice
  • 2 tbsp lime juice
  • 3 tbsp apple cider vinegar
  • 2 tsp ground cumin
  • 2 tsp dried oregano
  • 1 tsp smoked paprika
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 2 tsp salt
  • 1 tsp ground black pepper

For the Pickled Jalapeño Crema:

  • 1 cup sour cream
  • 3 tbsp pickled jalapeño brine
  • 1/2 cup sliced pickled jalapeños
  • 2 tbsp fresh lime juice
  • 1 clove garlic
  • 1 tsp salt

For serving:

  • 16 small flour tortillas
  • 1 cup pickled red onions
  • Fresh cilantro

Instructions
 

  • Pat the beef dry and season generously with salt and pepper. Heat the olive oil in a large Dutch oven over medium-high heat. Working in batches, sear the beef on all sides until deeply browned, about 2–3 minutes per side. Transfer the beef to a plate.
  • Lower the heat to medium and add the onion and garlic to the same pot. Cook for 3–4 minutes, scraping up any browned bits from the bottom of the pot.
  • Add the chipotle peppers, adobo sauce, cumin, Mexican oregano, smoked paprika, coriander, cinnamon, cloves, allspice, salt, and black pepper. Cook for about 1 minute, stirring constantly, until the spices are fragrant.
  • Pour in the beef broth, orange juice, lime juice, and apple cider vinegar. Stir well, scraping the bottom of the pot to loosen any remaining browned bits.
  • Cover the pot and transfer it to a 325°F oven. Cook for 3–3½ hours, or until the beef is incredibly tender and easily pulls apart with a fork.
  • Once finished, remove the beef from the cooking liquid and shred it with two forks. Return the shredded beef to the pot and toss it with plenty of the flavorful braising juices.
  • While the beef cooks, add the sour cream, mayonnaise, pickled jalapeños, pickled jalapeño brine, lime juice, garlic, and salt to a blender or food processor. Blend until completely smooth and creamy, about 30–45 seconds. If the crema is too thick to drizzle, blend in 1–2 tablespoons of water until it reaches your desired consistency.
  • Heat a dry skillet or griddle over medium-high heat. Warm the tortillas for about 20–30 seconds per side, until soft and lightly charred around the edges. Keep them wrapped in a clean kitchen towel so they stay warm while you assemble the tacos.
  • Fill each warm tortilla with a generous amount of barbacoa. Drizzle over the pickled jalapeño crema, then pile on the pickled onions and plenty of fresh cilantro.
