This thought played on repeat in my head when I was developing these Honeynut Cheerio Crispies. A simple swap elevates the traditional rice crispie, to a fun, no-bake dessert that comes together in minutes, blending gooey marshmallow sweetness with the nostalgic crunch of Honeynut Cheerios. And to take things up a notch? I attempted to mimic the cereal bars I grew up with by dipping the bottom of the bars in a white chocolate coating, delivering a true melt-in-your-mouth finish.

In a large saucepan over low heat, melt the butter and honey together until smooth. Stir in the marshmallows, letting them melt into a dreamy, gooey mixture that smells like pure nostalgia. Once fully combined, remove from heat and gently fold in the Honeynut Cheerios, coating every piece in that sticky sweetness. Press the honeynut cheerio crispies mixture into a greased 8×8-inch baking dish, smoothing it out evenly. After cooling for about 30 minutes, cut into squares and get ready for the fun part—white chocolate! Dip the bottom of each bar into melted white chocolate, letting the excess drip off before placing them on parchment paper. A quick chill in the fridge, and they’re ready to enjoy.

Ingredients
  

  • 2 tbsp butter
  • 2 cups miniature marshmallows
  • 2 ½ cups Honeynut Cheerios
  • 2 tbsp honey
  • 1 cup white chocolate chips melted

Instructions
 

  • In a large saucepan over low heat, melt the 2 tbsp butter. Add the 2 tbsp honey and stir until combined.

  • Once cooled and cut, dip the bottom of the bars into the melted 1 cup white chocolate chips, using the edge of a bowl to scrap off excess. Place the bars on parchment paper and chill for another 30 minutes until the chocolate is set.
