Chicken Katsu with Homemade Sweet & Sour Sauce
There’s something about crispy chicken that makes it hard to resist, especially when it’s paired with a really good sauce. This chicken katsu is one of those dinners that feels like takeout but is surprisingly easy to make at home. Think golden, crunchy chicken cutlets with a sweet, tangy sauce made from scratch.
I wanted to make a version that had all the crunch of classic chicken katsu but with a little twist. Instead of serving it with a traditional katsu sauce, I went with a homemade sweet and sour sauce. It has the perfect balance of sweetness, acidity, and a little savory depth from soy sauce and ginger. The pineapple juice gives it that familiar sweet and tangy flavor, while fresh garlic and ginger make it taste even better.
Crispy Chicken with Plenty of Crunch
The secret to great chicken katsu is getting that coating just right. Panko breadcrumbs are what give the chicken its signature crispy texture. They’re lighter and flakier than regular breadcrumbs, so they create a really satisfying crunch without making the chicken feel too heavy.
I like to slice the chicken breasts into thinner cutlets before breading them. This helps everything cook evenly and keeps the chicken tender on the inside. A quick dredge in flour, egg, and seasoned panko creates a coating that turns beautifully golden when fried.
One tip I always recommend is letting the fried chicken rest on a wire rack instead of placing it directly on a paper towel. This allows air to circulate underneath, helping the bottom stay just as crispy as the top.

Homemade Sweet & Sour Sauce
The homemade sauce is what brings the whole dish together. It’s made with pineapple juice, rice vinegar, ketchup, brown sugar, soy sauce, honey, garlic, and ginger. Everything simmers together until the flavors come together, then a little cornstarch slurry thickens it into a glossy sauce.
I love the combination of sweet pineapple and tangy rice vinegar. The brown sugar and honey round everything out, while the soy sauce adds just enough savory flavor. It’s a simple sauce, but it tastes so much better than anything from a bottle.
I recommend serving the sauce on the side or drizzling it over the chicken right before eating. That way, you get to keep as much of that crispy coating as possible.
How I Like to Serve Chicken Katsu
For a complete dinner, serve the chicken over steamed jasmine rice with sliced scallions and sesame seeds. I also love adding quick-pickled cucumbers for something fresh and crunchy alongside the warm chicken.
If you like a little heat, a spoonful of chili crisp is a great addition. The combination of crispy chicken, fluffy rice, tangy sauce, and a little spice makes this such a satisfying meal.
This is a great recipe to keep in your weeknight dinner rotation. It feels a little more special than your usual chicken dinner, but it doesn’t require a complicated ingredient list or hours in the kitchen. And once you make the sweet and sour sauce from scratch, you might not want to go back to the bottled version.
