There is something about a good pita pocket that makes dinner feel a little more fun. You have warm bread, juicy chicken, something creamy, something crunchy, plenty of fresh herbs, and just enough sauce to make every bite a little messy in the best possible way. These Chicken Shawarma Pita Pockets have become one of my favorite ways to turn a handful of simple ingredients into a dinner that feels incredibly satisfying.
The chicken is the star here. Boneless chicken thighs are marinated in olive oil, lemon juice, garlic, cumin, coriander, smoked paprika, turmeric, oregano, cinnamon, and a little cayenne, which gives the chicken that deeply savory, warmly spiced flavor you expect from shawarma. Once it hits a hot skillet, the spices create a beautiful crust around the edges while the chicken stays juicy and tender inside.
Then everything gets tucked into a warm pita with homemade tzatziki, hummus, crisp cucumber, lettuce, and thinly sliced red onion. It is fresh and creamy, savory and bright, with enough texture in every bite to keep you going back for another.
The Chicken Makes These Pita Pockets

What makes this recipe especially useful is that almost everything can be prepared ahead of time. When dinner rolls around, all you really need to do is cook the chicken, warm the pitas, and put everything on the table.

Ingredients
For the Chicken Shawarma
- 1½ lbs boneless skinless chicken thighs
- 3 tbsp olive oil
- 2 tbsp fresh lemon juice
- 4 garlic cloves finely minced
- 3 tsp ground cumin
- 2 tsp smoked paprika
- 1 tsp ground coriander
- 1½ tsp turmeric
- 1½ tsp dried oregano
- ½ tsp ground cinnamon
- 1 tsp cayenne pepper
- 1½ tsp kosher salt
- ½ tsp black pepper
For the Tzatziki
- 1 cup Greek yogurt
- ½ English cucumber grated
- 1 garlic clove finely grated
- 1 tbsp fresh lemon juice
- 1 tbsp extra-virgin olive oil
- 1 tbsp fresh dill finely chopped
- 1 tbsp fresh mint finely chopped
- 1 tsp salt
- 1 tsp ground black pepper
For the Pita Pockets
- 4 large pita breads
- 1 cup hummus
- 1 cup chopped romaine
- 1 English cucumber diced
- ½ small red onion thinly sliced
Instructions
- In a large bowl, combine the 3 tbsp olive oil, 2 tbsp fresh lemon juice, 4 garlic cloves, 3 tsp ground cumin, 2 tsp smoked paprika, 1 tsp ground coriander, 1½ tsp turmeric, 1½ tsp dried oregano, ½ tsp ground cinnamon, 1 tsp cayenne pepper, 1½ tsp kosher salt and ½ tsp black pepper. Add the 1½ lbs boneless skinless chicken thighs and toss thoroughly until completely coated. - Place the grated ½ English cucumber in a clean kitchen towel and squeeze firmly to remove as much excess liquid as possible. Combine the cucumber with the 1 cup Greek yogurt, 1 garlic clove, 1 tbsp fresh lemon juice, 1 tbsp extra-virgin olive oil1 tbsp fresh dill, and 1 tbsp fresh mint. Season with 1 tsp salt and 1 tsp ground black pepper. - Heat a large grill pan over medium-high heat. Remove the chicken from the marinade, allowing any excess to drip off. Cook the chicken for approximately 5–7 minutes per side, depending on thickness, until deeply browned and cooked through to an internal temp of 165°F. Transfer to a cutting board and let rest for 5 minutes. After resting, slice the chicken into thin strips
- Warm the 4 large pita breads in a dry skillet for 30–60 seconds per side.
- Carefully open each pita to create a pocket. Spread a generous layer of the 1 cup hummus inside each warm pita. Add a handful of 1 cup chopped romaine, followed by slices of the 1 English cucumber and slices of the ½ small red onion. Pile in the warm chicken shawarma and spoon plenty of tzatziki over the top. Finish with fresh parsley or dill, a drizzle of olive oil, and a squeeze of lemon. Serve immediately while the chicken and pita are warm.4 large pita breads
