Blueberry Lemon Coffee Cake

Blueberry Lemon Coffee Cake

A tender lemon pound cake layered with homemade blueberry jam and a buttery lemon crumb. This is the weekend bake you’ll want to make with your coffee still warm on the counter.

There’s a specific kind of Saturday morning I live for. The light is doing that soft thing through the kitchen window, nobody has anywhere to be, and there’s a cake in the oven filling the whole house with the smell of warm butter and lemon. This blueberry lemon coffee cake is the reason for most of those mornings lately.

I set out to make a coffee cake that didn’t feel like a compromise. So many coffee cakes are dry little things you tolerate because they came with brunch. Not this one. The base is a proper lemon pound cake, rich and buttery and soft, and running right through the middle is a ribbon of blueberry jam that you cook down yourself in about ten minutes. On top, a lemon crumb that bakes up golden and just barely crisp at the edges. Three layers, one pan, and a slice that makes people go quiet for a second when they take the first bite.

I’ve made this more times than I’d like to admit over the last month, and I finally got it exactly where I want it. Let me walk you through it.

Why You’ll Love This Blueberry Lemon Coffee Cake

The magic here is contrast. You get the dense, buttery pound cake, the bright jammy pop of the blueberry layer, and the sweet sandy crumb all in one forkful. Lemon ties the whole thing together and keeps it from tipping into cloying.

A few more reasons this one has earned its spot in my regular rotation:

  • The jam is homemade and takes ten minutes. No pectin, no candy thermometer, no fuss. Just blueberries, sugar, lemon, and a little cornstarch cooked down until glossy and thick.
  • It’s a one-pan bake. Everything layers into a single 9-inch square pan. No fillings to pipe, no cake to level.
  • It keeps beautifully. If anything, day two is better once the jam has fully set and the lemon has settled in.
  • It works year-round. Fresh blueberries in summer, frozen ones in the dead of winter. The jam doesn’t care.

The Ingredients That Matter Most

Nothing here is hard to find, but a few choices make the difference between a good cake and the one people ask you to bring again.

For the Lemon Pound Cake

Real butter, softened to the point where your finger leaves a dent but doesn’t sink through. Sour cream is my secret for a pound cake that stays tender instead of turning into a brick. And fresh lemon zest, not bottled juice standing in for it. Rub the zest into your sugar with your fingertips before you cream anything. That one move releases the oils and doubles the lemon flavor.

For the Blueberry Jam

Fresh or frozen both work. If you’re using frozen, don’t thaw them first. Toss them into the pan straight from the freezer and give the jam an extra minute or two to come together. A tiny bit of cornstarch sets it soft, which is exactly what you want tucked inside a cake. A firm, sliceable jam would tear the crumb when you cut it.

For the Lemon Crumb

Melted butter is the trick to a crumb that clumps into real craggy pieces instead of turning to sand. Stir it in and toss with a fork until you’ve got damp, clumpy crumbles, then leave it alone.

How to Make Blueberry Lemon Coffee Cake

Start with the jam, because it needs time to cool. This is the one step you can’t rush. Warm jam will melt into the batter and streak the whole cake instead of staying put as a clean ribbon, so I usually make it first thing and let it cool on a plate while I pull everything else together.

While the jam cools, mix up your crumb and set it aside. Then cream the butter, sugar, and zest until pale and fluffy, beat in your eggs one at a time, and fold in the dry ingredients until the batter just comes together. It’ll be thick, closer to a pound cake batter than a pourable one. That’s correct.

Now the fun part. Spread a little over half the batter into your lined pan. Spoon the cooled jam over the top and spread it into an even layer, leaving about a half-inch border around the edges so it doesn’t leak down the sides and scorch. Dollop the rest of the batter over the jam, gently coax it to cover, and scatter that lemon crumb over everything.

Bake at 350°F for 45 to 55 minutes. You want the crumb golden and a toothpick poked into the cake part to come out clean. If the top is browning faster than the middle sets, tent it loosely with foil for the last stretch.

Tips for the Best Coffee Cake

A month of testing taught me a few things worth passing along:

  • Cool the jam completely. I know I keep saying it. It’s the whole ballgame.
  • Respect the border. Jam that touches the pan edge welds your cake to the sides and burns. Keep that half-inch gap honest.
  • Don’t overmix the batter. Fold the flour in until the streaks disappear and then stop. Overmixing is how you get a tough, gummy crumb.
  • Let it rest before slicing. Give it at least 30 minutes in the pan. The jam firms up as it cools, and a warm cut turns into a landslide.

How to Store It

Keep the cake covered at room temperature for up to 2 days, or refrigerate it for up to 5. If you want that fresh-baked feel again, a slice warmed for ten seconds in the microwave brings the butter and jam right back to life. It also freezes well. Wrap individual slices and stash them for the mornings you need cake but don’t have it in you to bake.

Can I Make This a Day Ahead?

You can, and I’d argue you should. The flavors settle overnight and the jam layer firms up into that clean ribbon you’re after. Bake it the day before, let it cool completely, cover it, and glaze just before serving so the topping stays fresh.

For the glaze:

  • 1/2 cups powdered sugar
  • 1 tbsp lemon juice

Instructions

  • In a small saucepan, combine 2 cups blueberries, 1/3 cup granulated sugar, 1 tbsp lemon juice, 1 tbsp lemon zest, 1 tsp cornstarch, and 1/2 tsp salt. Cook over medium heat, stirring and mashing the berries with a spatula, until the mixture thickens to a spreadable jam that mounds on the spoon, about 8–10 minutes. Transfer to a bowl and cool completely.
2 cups blueberries, 1/3 cup granulated sugar, 1 tbsp lemon juice, 1 tbsp lemon zest, 1 tsp cornstarch, 1/2 tsp salt
  • Preheat the oven to 350°F. Grease a 9-inch square baking pan and line it with parchment paper.
  • In a bowl, stir together 3/4 cup all-purpose flour, 1/3 cup granulated sugar, and 1 tsp lemon zest. Pour in 5 tbsp salted butter, melted and toss with a fork until the mixture forms damp, clumpy crumbs. Set aside.
3/4 cup all-purpose flour, 1/3 cup granulated sugar, 1 tsp lemon zest, 5 tbsp salted butter
  • Beat 3/4 cup unsalted butter, 1 cup granulated sugar, and 1 tbsp lemon zest on medium-high until pale and fluffy, about 3 minutes.
1 cup granulated sugar, 3/4 cup unsalted butter, 1 tbsp lemon zest
  • Add 4 large eggs one at a time, beating well after each. Mix in 1/2 cup sour cream,1 tsp vanilla extract, and 3 tbsp lemon juice until smooth.
3 tbsp lemon juice, 4 large eggs, 1/2 cup sour cream, 1 tsp vanilla extract
  • In a separate bowl, whisk 2 cups all-purpose flour, 1 1/2 tsp baking powder, 1/4 tsp baking soda, and 1/2 tsp salt. Add to the wet ingredients and mix on low just until no dry streaks remain. The batter will be thick, like a pound cake batter.
2 cups all-purpose flour, 1 1/2 tsp baking powder, 1/4 tsp baking soda
  • Spread a little over half the batter evenly across the bottom of the pan. Spoon the cooled blueberry jam over the batter and spread it into an even layer, leaving a 1/2-inch border around the edges so it doesn't leak or burn. Dollop the remaining batter over the jam and gently spread to cover. Scatter the lemon crumb evenly over the top.
  • Bake for 45–55 minutes, until the crumb is golden and a toothpick inserted into the cake portion comes out clean. Let the cake cool in the pan for at least 30 minutes before lifting it out by the parchment. Cool further on a rack.
  • Whisk 1/2 cups powdered sugar with 1 tbsp lemon juice until smooth, adding a few drops more juice if needed. Drizzle over the cooled cake.
