Ingredients
  

For the Rice

  • cups sushi rice
  • 2 cups water
  • 3 tbsp rice vinegar
  • 1 tbsp sugar
  • ½ tsp salt

For the Bowl

  • 1 cup imitation crab shredded
  • 1 cup shelled edamame cooked
  • 1 avocado thinly sliced
  • 1 cucumber thinly sliced
  • 2 tbsp rice vinegar
  • 1 tsp sugar
  • 1/2 tsp salt

For the Spicy Mayo

  • 3 tbsp mayonnaise
  • 2 tsp sriracha
  • 1 tsp lime juice

For the Garnish (optional)

  • Toasted sesame seeds
  • Thinly sliced scallions

Instructions
 

  • Rinse 1½ cups sushi rice under cold water until water runs clear. Combine rice and 2 cups water in a pot and bring to a boil. Reduce heat, cover, and simmer for 15 minutes. Remove from heat and let stand, covered, for 10 minutes. Stir in 3 tbsp rice vinegar, 1 tbsp sugar, and ½ tsp salt.

  • Toss thinly sliced 1 cucumber with 3 tbsp rice vinegar, 1 tsp sugar, and 1/2 tsp salt. Set aside to marinate for 5–10 minutes.

  • Whisk together 3 tbsp mayonnaise, 2 tsp sriracha, and 1 tsp lime juice until smooth. Adjust heat to taste.
