Ingredients
  

  • 2 cups old-fashioned rolled oats
  • ½ cup slivered almonds
  • ¼ cup pumpkin seeds
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ cup maple syrup
  • ¼ cup coconut oil
  • ½ cup brown sugar
  • 1 tsp vanilla extract

Instructions
 

  • Preheat the oven to 350°F. Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.
  • In a large bowl, toss 2 cups old-fashioned rolled oats, ½ cup slivered almonds, ¼ cup pumpkin seeds, ½ tsp salt, 1 tsp ground cinnamon, and ½ tsp ground nutmeg. Spread on a baking sheet and toast for 10–12 minutes until lightly golden, stirring halfway.

  • In a small saucepan over medium heat, melt ¼ cup coconut oil with ½ cup brown sugar and ½ cup maple syrup, stirring until smooth and slightly bubbly. Remove from heat and stir in 1 tsp vanilla extract.

  • Pour the syrup over the toasted oat mixture and stir until everything is evenly coated. Transfer to the prepared baking pan and press firmly into an even layer using a spatula or your hands (lightly greased).
  • Bake for 12–15 minutes until lightly golden and fragrant. Remove from oven and immediately press chocolate chips or dried fruit on top if using.
  • Allow the bars to cool completely in the pan (1–2 hours) before lifting out with the parchment overhang. Slice into 12 bars and store in an airtight container at room temperature for up to 5 days.
