- 6 oz cremini mushrooms chopped
- 6 oz baby bella musrhooms chopped
- 1 tsp fresh thyme leaves or ½ teaspoon dried
- 1 tbsp all-purpose flour
- ¼ cup heavy cream
- ¼ cup cream cheese
- 1 tbsp parsley chopped
- Salt and pepper to taste
For assembly:
- 1 egg beaten
- Flour for dusting
Instructions
- In a large bowl, whisk together 2 ½ cups all-purpose flour and 1 tsp salt. Cut in cold 1 cup unsalted butter until mixture resembles coarse crumbs. Stir in grated 1 cup sharp cheddar cheese until evenly distributed. - Form into a disk, wrap in plastic, and chill at least 30 minutes.

- Sprinkle 1 tbsp all-purpose flour over the mushrooms, stir, and cook 1–2 minutes. Slowly stir in ¼ cup heavy cream until the mixture thickens. - Roll out dough on a floured surface to ~1/8 inch thick. Cut into 4–5 inch circles. Spoon 2–3 tablespoons of filling onto each circle. Fold into half-moons, press edges with a fork, brush with beaten 1 egg, and cut a small slit on top.1 egg
