Coconut Cardamom Granola
Ingredients
- 3 cups old-fashioned rolled oats
- ½ cup chopped hazelnuts
- ½ cup chopped walnuts
- 1 cup unsweetened flaked coconut
- ½ cup raisins
- 1 tsp ground cinnamon
- ½ tsp ground cardamom
- ½ tsp salt
- ⅓ cup melted coconut oil
- ⅓ cup maple syrup
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 325°F. Line a large baking sheet with parchment paper.
- In a large bowl, combine 3 cups old-fashioned rolled oats, ½ cup chopped hazelnuts, ½ cup chopped walnuts, 1 cup unsweetened flaked coconut, 1 tsp ground cinnamon, ½ tsp ground cardamom, and ½ tsp salt. - Spread the mixture into an even layer on the prepared baking sheet. Bake for 25–30 minutes, stirring halfway through, until the granola is golden brown and smells fragrant.
