  • 1 lb pizza dough
  • 1 cup pizza sauce
  • 1 small zucchini sliced into ¼-inch rounds
  • 1 small yellow squash sliced into ¼-inch rounds
  • 1 small eggplant sliced into ¼-inch rounds
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tsp italian seasoning
  • 4 oz Boursin cheese crumbled

Instructions
 

  • Preheat oven to 475°F. If using a pizza stone, place it in the oven.
  • Toss the 1 small zucchini, 1 small yellow squash, and 1 small eggplant slices with 2 tbsp olive oil, 1 tsp salt, 1 tsp black pepper, and 2 tsp italian seasoning.

  • Heat a grill pan over medium-high heat and grill each vegetable slice for 2–3 minutes per side until tender and slightly charred. Set aside.
  • Roll out the 1 lb pizza dough on a lightly floured surface to your desired thickness. Transfer to a parchment-lined baking sheet or preheated pizza stone.

  • Spread a thin layer of 1 cup pizza sauce over the dough, leaving a small border for the crust. Layer the grilled vegetables in overlapping rows or a circular pattern for a ratatouille-inspired look.
