Turkey Burger with Yogurt Spread, Roasted Red Pepper & Crispy Fennel
Ingredients
For the Burgers:
- 1 lb ground turkey
- 1 clove garlic minced
- 2 scallions minced
- 1 tsp smoked paprika
- ½ tsp ground cumin
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp olive oil
For the Yogurt Spread:
- ½ cup plain greek yogurt
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 1 tsp Dijon mustard
- ½ tsp honey
- 2 tbsp fresh dill minced
- 1 clove garlic minced
- Salt & pepper
For the Roasted Red Peppers:
- 2 large red bell peppers
- 1 tbsp olive oil
- 1/2 tsp of salt
For the Crispy Fried Fennel:
- 1 small fennel bulb thinly sliced
- ½ cup all-purpose flour
- ½ tsp smoked paprika
- ½ tsp salt
- ¼ tsp black pepper
- ½ cup buttermilk
- 2 cups vegetable oil
Additional Toppings:
- 4 slices red onion
- 4 brioche buns lightly toasted
Instructions
- Preheat oven to 450°F.
- Slice 2 large red bell peppers into large flat pieces, removing seeds and membranes. Place on a baking sheet, drizzle with 1 tbsp olive oil, sprinkle with 1/2 tsp of salt, and roast for 20–25 minutes, flipping halfway through, until skin is charred and peppers are tender.Transfer to a bowl, cover with foil for 10 minutes, then peel off skins.2 large red bell peppers, 1 tbsp olive oil
- Heat the 2 cups vegetable oil in a skillet to 350°F.2 cups vegetable oil
- Mix ½ cup all-purpose flour, ½ tsp smoked paprika, ½ tsp salt, and ¼ tsp black pepper in a shallow dish. Pour ½ cup buttermilk into another dish. - Fry in hot oil for 2–3 minutes per side, until golden and crispy. Drain on paper towels.

- Heat olive oil in a skillet or grill pan over medium-high heat. Cook burgers for 4–5 minutes per side, or until internal temperature reaches 165°F.
- Spread yogurt sauce on the bottom half of each toasted 4 brioche buns. Add the turkey burger, then layer with roasted red pepper strips, 4 slices red onion, and crispy fried fennel. Top with the bun and serve immediately.
