Chicken Gnocchi Soup
Ingredients
- 1 lb chicken breast
- 2 tbsp olive oil
- 1 medium onion diced
- 2 carrots diced
- 2 celery stalks diced
- 3 cloves garlic minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper
- 1 lb potato gnocchi store-bought or homemade
- 2 tbsp all-purpose flour
- 2 tbsp butter
Instructions
- Heat 2 tbsp olive oil in a large pot over medium heat. Season 1 lb chicken breast with salt and pepper, then sear until golden on both sides (not fully cooked). Remove and set aside.2 tbsp olive oil, 1 lb chicken breast

- In a small pan, melt 2 tbsp butter and whisk in 2 tbsp all-purpose flour to form a roux. Cook 1–2 minutes until lightly golden.
